Recipe: Iddy 怎么制作（印度食品）？

Iddly .... mmm...yummy!

Ingredients needed:

1)      200g Iddly flour

2)      320ml Water

3)      Oil for spreading the Iddly mould

 

Method

 

1. Buy a packet of Iddly mix.
2. Mix the Iddly flour gently with the water.
3. Leave it for 2-3 mins. Spread the mould with oil.
4. Pour the batter in the steaming cups.
5. Cover the steamer and steam for 7-10mins.
6. Test the Iddly with a stick. If the batter doesn’t stick to the stick it is cooked.

Note: Iddly usually serve with sambar or cattni. It may also serve with brown sugar for children.

Recipe: Vadai "沃道伊"怎么制作（印度食品）？

Vadai ready for consumption!

 

We will be making 'Vadai" (around 23 pieces) from the following ingredients:

1)      250g pigeon pea (Toor Dhal) 

 

2)      ½ teaspoon of cumin seeds 

3)      2 green chilies

4)      2 red chilies

5)      1 small ginger(around 10g)

6)      1 comb of curry leaves

 7)      3-5 teaspoon of corn flour

8)      1 teaspoon of salt 

 

Note: You may add in others ingredients according to individual preference. Ingredients such as coriander leaf and fennel seeds are the common ingredients that add on to the vadai too.

 

Method

1.      Soak the dhal for 2 hours.

2.      Blend 2/3 of dhal.

3.      Mix the dhal with the remaining 1/3 dhal. Then add the curry leaves, cumin seed, cut chilies and salt.

4.      Add in some corn flour.

5.      Make it into dough and fried in the pan.

6.      Fried till golden brown and ready to be served.

Note: A successful vadai should be crispy outside and soft inside.
